TEMYEFYL #1: Homeade Biscuit Pizzas

To kick off the “The Easiest Meal You’ll Ever Fix in Your Life” series, we’re going to start with something that we’ve been eating in our home for a few years. This is usually a go to dish for me when I’m tired and just don’t feel like cooking (and let’s face it, if I don’t cook, we’re pretty much not eating in my house). The best things about this dish are as follows:

  • It’s so easy, a caveman can do it
  • Not too many ingredients, most you’ll probably already have
  • there are a couple of different ways to make it
  • only takes 15-20 min. to prepare

Like I said before, there are a couple of ways to make this dish. Let’s start with the simplest.

ECQ (trifecta!)  Refrigerated Canned Biscuit Mini Pizza Method 

Ingredients

1 Can Pasta Sauce*

1 Can refrigerated Biscuit Dough

2 Packages of Shredded cheese, your preference**

2 Hotdogs, sliced like pepperoni (I suggest beef dogs. Or you could just buy actual pepperoni.)

Additional optional fixings: onions, peppers, shrooms, that leftover chicken in the fridge that needs to be used soon

Directions

  1. Turn on some music. I suggest Jazz, it’s very relaxing
  2. Following directions on the can of biscuits, preheat oven to 350-400 degrees F.
  3. Open can of biscuits (duh). Put the biscuits onto a cookie sheet/baking sheet.
  4. Using your thumb or a rolling pin, flatten out each biscuit until you have what looks like a bunch of naked mini pizzas. Don’t make them so thin that you poke holes through them, but keep in mind that biscuits do rise.
  5. Open your pasta/pizza sauce
  6. Is it open? Good. Now spoon a spoonful of sauce onto your naked pizzas. If you want to get all fancy, sprinkle on a little italian seasoning or oregano/parsley blend.
  7. Sprinkle your first layer of cheese onto your mini pizzas.
  8. Apply the fixings
  9. Sprinkle the second layer of cheese.
  10. Put your pizzas in the oven for 15 minutes or until the crust is  golden
  11. Take out and enjoy

MMM Bisquick Baking Mix Method

Ingredients

2/3 c water or milk

2 1/4 c baking mix

1 Can Pasta Sauce*

2 Packages of Shredded cheese, your preference**

2 Hotdogs, sliced like pepperoni (I suggest beef dogs. Or you could just buy actual pepperoni.)

Additional optional fixings: onions, peppers, shrooms, that leftover chicken/steak in the fridge that needs to be used soon

*We always use pasta sauce b/c its always in the house, but if  you prefer pizza sauce, go for it.

**You can also use Parmesan cheese if you’ve already got it

Directions

  1. Combine your baking mix and water/milk in a large mixing bowl. The mix should be kind of sticky.
  2. Flour a cutting board generously. Spoon your sticky dough mix onto cutting board.
  3. Flour your hands. Knead the dough at least 5 times, flouring when necessary.
  4. Using a rolling pin (or a can of baking spray if you don’t have a rolling pin), roll the dough out until it is flat like a pizza dough.
